What is Yacon Syrup

I looked at the facts of every low sugar sweetener I could find, and I always found bad to go with the good. Honey and maple syrup had too much sugar, and so did dates and other dried fruits. Agave seemed like a great low glycemic solution, until I read all the facts about how bad too much fructose is for your body. Agave syrup is almost 90% fructose and this is hard for the liver to process, so ultimately agave syrup is actually fattening. I threw out my agave.

Then I read the research that artificial sweeteners, and natural sweeteners like stevia, actually increases the appetite and promotes weight gain in rats. I reached the conclusion that to eat healthily, and slimly, I just had to forsake sweetness all together.

I was wrong.

Because then I stumbled across yacon syrup. Yacon syrup is derived from the Yacon plant, a tubular plant in the Andean region of South America, and tastes like honey or molasses. I didn’t have any high hopes, but then I found research that seemed too good to be true.

When yacon syrup was given daily to obese women over a 120 day period the results were fenomenal. I quote: “Daily intake of yacon syrup produced a significant decrease in body weight, waist circumference and body mass index”!

Why does yacon syrup promote weight loss?

One reason is that because the sugar in yacon syrup is mainly in the form of fructooligosaccharides (FOS) which cannot be absorbed by the body, there is very little elevation of the blood sugar levels. It has a much lower glycemic index than other sweeteners such as honey or agave syrup, and is low in calories.

It might also be because the consumption of yacon syrup increases defecation frequency and satiety sensation.ref1 So you eat less.

Also FOS are good for our digestive system. They are fermented in the colon by probiotics – bacteria which are very beneficial to us and help alleviate digestive disorders.

So I had at last found a sweetener that was natural, healthy and slimming!

I was on a roll, because then I discovered another magical ingredient that was both health enhancing, and slimming!

According to one study this ingredient promoted a reduction in abdominal obesity when given during 12 weeks to women with abdominal obesity.

In another study when this ingredient was added to the diet of diabetics it was shown to stabilize weight gain.

And this ingredient also speeds up the metabolism. Apparently farmers in the US found this out by mistake in the 1940s when they tried to fatten their livestock with this ingredient. It didn’t work. The livestock became lean, active and hungry!

So now that I had two of natures wonderful healing and slimming ingredients, nothing could stop me from creating delicious recipes!

You see I believe that a Low Carb Diet has to be healthy and fun, to work. Self deprivation is not good for you – and it is really hard to do. You end up just thinking about what you may not indulge in, the whole time! It is much easier to treat yourself, but to do it healthily. Don’t treat yourself to store bought chocolate chip cookies, and then feel bad because you didn’t manage to keep with your diet. Treat yourself to the home made chocolate chip cookies in this book and delight in the fact that you are helping yourself lose weight, and that your body just received a load of vitamins and minerals.

Too Good to be True? A Valid Question.

Introducing – Yacon Syrup

Yacon Syrup is relatively new on the market, although it’s been around a while in South America. It is derived from a tubular plant, and tastes like molasses.

Let’s go right to the research;

When obese pre-menopausal women were given 20g of yacon syrup every day for 120 days the results showed that:

“Daily intake of yacon syrup produced a significant decrease in body weight, waist circumference and body mass index.”["Yacon Syrup; beneficial effects on obesity and insuling resistance in humans" Clinical Nutrition. Gentaa; Cabreraa]

In other words eating this sweetener daily helps you lose weight.

Can you think of anything more delightful?

“I’m trying to lose weight, so I have to eat this chocolate cake every single day. In fact I even have to have a cookie with my coffee..”

AND, FOS are good for our digestive system. They are fermented in the colon by probiotics – bacteria which are very beneficial to us and help alleviate digestive disorders.

I was on a roll, because then I discovered another magical ingredient that was both health enhancing, and slimming – coconut oil!

  • Can help to strengthen your immune system and fight infection
  • Helps to boost your energy levels
  • Can improve digestion and nutrient absorption
  • Helps to optimize your weight by increasing your metabolism
  • Helps to control diabetes
  • Beneficial for thyroid function
  • Leaving your skin feeling smooth and looking younger

Why coconut oil is different from other vegetable oils:

Most vegetable oils consist of long chain fatty acids( LCFAs). LCFAs are hard for the body to digest since they require special enzymes. They are also stored in the body as fat.

Coconut oil consists mainly of medium chain fatty acids (MCFAs). MCFAs on the other hand are smaller and easier to digest. They are immediately converted into energy rather than being stored as fat. So coconut oil really functions as a carbohydrate by giving the body quick energy, with ONE important exception. Coconut oil does NOT produce an insulin spike! And several studies show that it promotes weight loss.

According to one study coconut oil promoted a reduction in abdominal obesity when given during 12 weeks to women with abdominal obesity. ["Effects of dietary coconut oil on the biochemical and anthropometric profiles of women presenting abdominal obesity"; Lipids 2009 Jul;44, Assuncao ML et al.]

In another study coconut oil as added to the diet of diabetics and was shown to stabilize weight gain.[Clinical Nutrition, 28:585.]

Coconut oil also speeds up the metabolism. Apparently farmers in the US found this out by mistake in the 1940s when they tried to fatten their livestock with cheap coconut oil. It didn’t work. The livestock became lean, active and hungry!

In one study mice were given daily doses of MCFAs, another group of mice wasn’t. The mice were regularly subjected to a swimming endurance test. The MCFA mice quickly began to outperform the other mice.["Swimming endurance capacity of mice is increased by consumption of medium-chain triglycerides." Journal of Nutrition 125:531 Fushiki, T and Matsumoto, K 1995]

When your metabolism speeds up you will have more energy and will burn more calories a day.

The prevalent myth about coconut oil is that it is unhealthy since it is a saturated fat. This is not true. Populations that eat large amounts of coconut oil have low rates of heart disease. ["Cholesterol, coconuts and diet on Polynesian atolls?"; American Journal of Clinical Nutrition, 1981;34:1552-1561 Prior IA et al;]
